Pumpkin Bread (I dare say the best!)

It is no secret that my Jules & I are big pumpkin fans -- we try most all things pumpkin!  One day Megan brought in some pumpkin bread to work and it was AMAZING and I had to make it for the girls so she shared the recipe.  She had the recipe shared with her from her friend, Brenda! It is so moist, easy & yummy!  If you are a pumpkin fan you should for sure give it a try!  

Pumpkin Bread 

5 large eggs

1 1/4 cups canola oil

1 can (15oz) solid packed pumpkin

2 cups all purpose flour

2 cups sugar

2 packages (3oz each) cook & serve vanilla pudding

1 teaspoon baking soda

1 teaspoon ground cinnamoon

1/2 teaspoon salt

In a large bowl, beat the eggs.  Add the oil & pumpkin, beat until smooth.  Combine remaining ingredients; gradually beat into pumpkin mixture. 

Pour batter into five greased 5 3/4 x 3 x 2 inches loaf pans.  Back at 325º for 50-55 minutes.  Let cool. 

Brenda recently made some and shared her picture with us.  I just put the ingredients in my cart for shipt shopping and will be making some this weekend!
